Totally Tart(y) Parfait  

Pretty parfaits round two! This perfectly pink parfait is a healthy way to incorporate antioxidants into your day, whether its first thing with an all-natural raw breakfast or the ideal snack after a good session at the gym, this parfait can be made with ease. Plus, the no sugar added fruit blend found in the Smartfruit Superfruit All-Stars will provide a natural boost from the guarana extract.


📝 Ingredients: Totally Tart(y) Parfait           

10 oz. Coconut Yogurt (Unsweetened)                           

¼ Cup Red Currant    

8 Fresh Strawberries       

½ to 1 Tbsp. Agave or Maple Syrup  

1 Tbsp. Goji Powder             

1 Cup Fine Oats           

2 Tbsp. Almond Butter

1 Tbsp. Agave           

1 ½ Tbsp. Almond Milk

Pinch of Salt             

2 Tbsp. Goji Berries           

½ Cup Chopped Almonds     

 1 Tsp. Smartfruit Superfruit All-Stars                        


🍶 Preparation:

  1. Start by making the granola; preheat the oven to 330F
  2. In a small bowl, combine almond butter, agave, and almond milk and stir until smooth
  3. In a separate bowl, add oats and salt; mix well
  4. Pour almond mixture over oats and stir until well coated
  5. Spread the granola over prepared baking sheet and bake for 12 minutes or until golden brown
  6. Remove from oven and let cool
  7. Once cooled down add goji berries and chopped almonds
  8. Next assemble your parfait!
  9. Add strawberries, red currant, agave, and goji powder to a food processor or blender and blend until smooth
  10. Gently fold in the coconut yogurt
  11. Add this mixture to your parfait dish as your first layer
  12. Top with granola
  13. Finish with some fresh berries and Smartfruit Superfruit All-stars
