📝 Ingredients: Totally Tart(y) Parfait
✻ 10 oz. Coconut Yogurt (Unsweetened)
✻ ¼ Cup Red Currant
✻ 8 Fresh Strawberries
✻ ½ to 1 Tbsp. Agave or Maple Syrup
✻ 1 Tbsp. Goji Powder
✻ 1 Cup Fine Oats
✻ 2 Tbsp. Almond Butter
✻ 1 Tbsp. Agave
✻ 1 ½ Tbsp. Almond Milk
✻ Pinch of Salt
✻ 2 Tbsp. Goji Berries
✻ ½ Cup Chopped Almonds
✻ 1
Tsp. Smartfruit
Superfruit All-Stars
🍶 Preparation:
- Start by making the granola; preheat the oven to 330F
- In a small bowl, combine almond butter, agave, and almond milk and stir until smooth
- In a separate bowl, add oats and salt; mix well
- Pour almond mixture over oats and stir until well coated
- Spread the granola over prepared baking sheet and bake for 12 minutes or until golden brown
- Remove from oven and let cool
- Once cooled down add goji berries and chopped almonds
- Next assemble your parfait!
- Add strawberries, red currant, agave, and goji powder to a food processor or blender and blend until smooth
- Gently fold in the coconut yogurt
- Add this mixture to your parfait dish as your first layer
- Top with granola
- Finish with some fresh berries and Smartfruit Superfruit All-stars
