📝 Ingredients: Pink Pitaya Chia Pudding
✻ 1 Cup Cashew Milk
✻ ¼ Cup Chia Seeds
✻ 2 Tbsp. Maple Syrup (Try using Smartfruit Superfruit All-Stars)
✻ 1 Tbsp. Pink Pitaya Powder (Dissolved in 2 Tbsp. Water)
✻ 1 Tsp. Vanilla Extract
✻ ¼ Cup Coconut Yogurt
✻ Red Currants
✻ Dragon Fruit
✻ Rose Blossoms
✻ 1 Cup Coconut Yogurt
🍶 Preparation:
- Start by adding chia seeds, maple syrup or Smartfruit, vanilla, milk, and pitaya powder to a jar
- Cover tightly with lid and shake well to combine
- Let rest in the refrigerator for at least 1 hour or up to overnight
- When ready to eat stir in ¼ cup coconut yogurt
- Scoop desired amount into a jar or bowl
- Top with more coconut yogurt
- Finish with currants, dragon fruit, and rose blossoms
- Delicious!
