📝 Ingredients: Pink Chia Pudding
✻ 1 Cup Fresh or Frozen Raspberries
✻ 1 Cup Soy Milk
✻ 3 Tbsp. Maple Syrup (Try using Smartfruit Superfruit All-Stars)
✻ ¼ Cup Soy Yogurt
✻ 2 Tsp. Pink Pitaya Powder (Dissolve in 2 Tsp. Water)
✻ ¼ Cup Chia Seeds
✻ 1 Cup Dairy-free White Chocolate
✻ 1.5 Tsp. Pink Pitaya Powder
🍶 Preparation:
- Start by adding berries, milk, sweetener, yogurt, and dissolved pitaya powder to a blender
- Blend until smooth
- Pour mixture into a bowl and add in chia seeds; stir well then let rest in refrigerator for at least 1-2 hours or overnight *Stirring occasionally until in reaches a pudding-like consistency
- For the chocolate cups, combine melted white chocolate and pitaya powder
- Add chocolate to a silicone mold, then fill with chia pudding mixture
- Refrigerate until ready to serve
- Before serving top fresh raspberries, pomegranate arils, or fruit of your choice!
