 Pink Chia Pudding  

Chia pudding infused with bold pitaya and raspberry flavor nestled inside a homemade white chocolate cup, need we say more? This taste-bud tantalizer will satisfy every sweet tooth and compliment any meal. Made with a non-GMO, fat-free fruit concentrate, this chia pudding will have you looking for seconds or even thirds. Using Smartfruit instead of traditional sugar not only adds a level of decadence to your dessert but it also immerses your taste-buds into a power packed world of superfoods and antioxidants. Yum-mazing!!   

 

📝 Ingredients: Pink Chia Pudding        

 1 Cup Fresh or Frozen Raspberries                               

 1 Cup Soy Milk    

 3 Tbsp. Maple Syrup (Try using Smartfruit Superfruit All-Stars)              

 ¼ Cup Soy Yogurt

 2 Tsp. Pink Pitaya Powder (Dissolve in 2 Tsp. Water)       

 ¼ Cup Chia Seeds

 1 Cup Dairy-free White Chocolate        

 1.5 Tsp. Pink Pitaya Powder     

 

🍶 Preparation:

  1. Start by adding berries, milk, sweetener, yogurt, and dissolved pitaya powder to a blender
  2. Blend until smooth
  3. Pour mixture into a bowl and add in chia seeds; stir well then let rest in refrigerator for at least 1-2 hours or overnight *Stirring occasionally until in reaches a pudding-like consistency
  4. For the chocolate cups, combine melted white chocolate and pitaya powder
  5. Add chocolate to a silicone mold, then fill with chia pudding mixture
  6. Refrigerate until ready to serve
  7. Before serving top fresh raspberries, pomegranate arils, or fruit of your choice!
