Happy Apple-Peach Crepe Thursday
Although summer is almost over, here’s a fresh and flavorful Apple-Peach Crepe recipe made with some fresh fruit and fruit concentrate. The fruit concentrate adds a little sweetness, aroma and texture when drizzled on top. In this specific recipe, a peach fruit concentrates was also added into the crepe base for both flavoring and as a natural sweetener.
📝Apple-Peach Crepe Ingredients:
- 1/2 cup Soy milk
- 1/2 cup Water
- 1/4 cup Melted Soy Margarine
- 3 tablespoons Smartfruit Perfect Peach
- ½ tsp Vanilla Extract
- 1 cup Unbleached All-Purpose Flour
🍶Apple-Peach Crepe Preparation:
- Place ingredients for crepes in a blender in order listed. Secure lid and blend on medium speed for 20 seconds. Allow batter to rest in fridge for two hours before cooking.
- in a separate blender jar, add coconut yogurt and Smartfruit Perfect Peach and blend on low speed for 15-20 seconds.
- Dice all fruit into small pieces and place in medium mixing bowl. Pour yogurt mixture over fruit and stir to combine.
- Set aside in fridge while cooking crepes & Heat a skillet or crepe pan over medium heat and lightly coat with oil or cooking spray.
- For each crepe, pour ¼ cup batter into center of pan and swirl pan gently to distribute batter in a thin layer.
- Cook for 1 minute or until the top begins to dry out and underneath is lightly golden. Flip and cook an additional 30 seconds until done. Repeat with remaining batter.
- To serve, fold crepe in half, fill with desired amount of fruit salsa and fold over again. Top with additional Coconut yogurt and drizzle with Smartfruit Perfect Peach.
